What You’ll Need

• 2 tablespoons butter

• 2 bananas

• 1 cup light brown sugar

• 1 teaspoon pure vanilla extract

• 1/2 teaspoon cinnamon

• 1 pinch salt

• 2 scoops vanilla bean ice cream

• Saucepan

• Sharp knife

• Heat resistant spoon

• Ice cream scoop

 

What to Do

• Use the sharp knife to slice the bananas into half-inch round slices. For a fancier presentation you can also cut the bananas on the bias to create angled slices. Be sure not to cut the bananas too far in advance on creating the actual recipe as exposure to the air will cause them to brown and get slimy

• Put the saucepan over medium heat and add the butter

• Carefully swirl the pan or stir the butter to melt it without allowing it to burn

• Once the butter melts, add in the sliced bananas and stir to coat them completely in melted butter

• All them to cook, stirring continuously, for two minutes

• Add the brown sugar and stir to loosen any lumps and start the sugar dissolving into the butter

• Once the brown sugar has started dissolving, add in the pure vanilla extra, salt, and cinnamon

• Stir to fully integrate all of the ingredients

• Lower the heat and continue cooking for another two minutes, stirring continuously and being sure to scrape along the bottom of the pan to prevent the butter and sugar from sticking and burning

• The mixture should come together as a thick, yet still pourable, caramel sauce

• Use the ice cream scoop to scoop the ice cream into serving dishes

• Spoon the bananas foster mixture over the ice cream and serve immediately, or put the mixture in a jar and store in the refrigerator for later use

 

The traditional bananas foster recipe is made with alcohol and flambéed, set on fire, usually tableside as part of the presentation. This adds a slight variation in the flavor and texture. If desired, you can add one ounce of alcohol such as rum or brandy into the bananas foster mixture with two minutes left in the cooking. Be very careful to add this while the pan is off the heat and then return to the heat to prevent flaming. Take caution and keep your head back while returning the saucepan to the heat just in case a small amount of the alcohol does ignite. If this happens, it will go out quickly when the alcohol within the liquor burns off.
